Is prefab parts not a common practice with newly build houses? Like, you get a truck with some walls and a roof, you stick them together, put in some wiring and plumbing, stick on some plaster and repeat for the next house?

Extremely uncommon.
The only prebuilt part is the roof truss. Not the roof, just the truss.
Prebuilt homes, even prebuilt sections, not including trailer homes, are extraordinarily rare in the US.
