I’ve not done the scrambled to raw eggs part but I have split the mixture back in yoke and whites by whisking it backwards.
I wisk clockwise, so to unwisk it I had to do an anticlockwise wisk.
You do have to be careful because if you do it too much you overshoot and are back to mixed eggs again.

In this instance, whisking left around is not the same as anticlockwise.
